Combine the soy sauce, lemon juice, sugar, ginger, yuzu ponzu sauce and orange juice in a medium saucepan or skillet.

Simmer the mixture over medium heat to dissolve the sugar. Remove from pan and set aside to cool.

In the pan, heat 1½ inches of oil over medium high heat. Fry the noodles for 30 seconds (flip in between) until puffed. Drain over paper towels.

Add the sesame oil over the noodles and season with salt. Break the noodles into 1-inch pieces.

Arrange the lettuce leaves and top with 2 tablespoons of noodles.

Arrange the tuna slices and top with ¼ cup of the sauce. Set aside for 1 minute. Flip the slices and wait for another minute.

Over each lettuce leaf, add a tuna slice and another ¼ teaspoon of sauce. Garnish with a drop of Sriracha, a jalapeno slice, and a cilantro sprig; serve warm.
